                                     Carrot Cake Squares

Our carrot cake recipe comes from my family’s church cookbook. We have adapted the original by adding more spices, golden raisins, currents, and walnuts for a darker, richer cake. Carrot cake wouldn’t be carrot cake without the cream cheese frosting and ours incorporates a little extra cinnamon to complete these luscious cake squares. More than a cookie, but less than a slice of cake!
